Missing summer already? Our mates over at Avocados Australia have been busy in the kitchen, whipping up some winter avo inspiration to transport you back to warmer days (or at least transport your tastebuds).
This avocado chimichurri not only looks impressive, it's super easy and is a great way to level up any boring old piece of meat - lamb, beef, chicken or use it as a dressing on veggies or salad!
1/4 of an avocado
2 cloves garlic
2 cups chopped parsley (fresh)
2 cups chopped coriander (fresh)
1 long green chilli chopped
1/4 cup olive oil
2 TBS water
Put all the ingredients in the bowl of a food processor, blitz until everything is well combined and is a saucey kind of consistency. Serve straight away or make up to two days in advance and store in an air tight container in the fridge for later!
Play around with the herbs, you can really use whatever takes your fancy or whatever you have growing in your herb garden!
